Ingredients

  • 1 pound ground turkey
  • 2 large sweet potatoes, cubed
  • 1 bell pepper (red or yellow), diced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup chicken broth (or vegetable broth)
  • 2 cups spinach, roughly chopped
  • Salt, pepper, cumin, and paprika to taste
  • Optional: sliced avocado, lime wedges, feta cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onion and bell pepper for 4–5 minutes until soft and translucent.
  2. Add minced garlic and cook for another minute, stirring constantly.
  3. Stir in ground turkey and season with salt, pepper, cumin, and paprika. Cook until browned, breaking it apart as it cooks.
  4. Add sweet potato cubes and pour in the chicken broth. Mix well and bring to a simmer.
  5. Cover the skillet and cook for 15–20 minutes until sweet potatoes are tender, stirring occasionally.
  6. Add chopped spinach and cook for an additional 2–3 minutes until wilted. Taste and adjust seasoning as needed.

Notes

Avoid overcrowding the pan for better browning. This dish is great for meal prep and keeps well in the fridge for up to 3 days. You can double the batch and freeze extras in airtight containers.
