- 4 large sweet potatoes (or smaller for lighter portions)
- 1 pound ground turkey
- 1 cup black beans, rinsed and drained (or substitute with corn)
- 1 cup corn (fresh or frozen)
- 1 teaspoon chili powder (adjust to taste)
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or mozzarella)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Scrub sweet potatoes and prick several times with a fork.
- Place sweet potatoes on a parchment-lined baking sheet. Roast for 45–60 minutes until fork-tender.
- Meanwhile, heat a skillet over medium. Add ground turkey, cook and break it up until browned and fully cooked (about 6–8 minutes).
- Add black beans, corn, chili powder, cumin, salt, and pepper. Stir well and cook for 5 minutes to combine flavors.
- Slice cooked sweet potatoes in half lengthwise. Scoop out a bit of flesh if desired, then fill with turkey mixture.
- Top with shredded cheese and return to oven. Bake for 10–15 minutes until cheese melts and bubbles.
- Remove from oven, garnish with cilantro if using, and serve warm.
Notes
You can prep the filling in advance and store separately. For a spicier kick, mix in chopped jalapeños or hot sauce. A cheese blend adds extra richness for cheese lovers.
