  • 4 large sweet potatoes (or smaller for lighter portions)
  • 1 pound ground turkey
  • 1 cup black beans, rinsed and drained (or substitute with corn)
  • 1 cup corn (fresh or frozen)
  • 1 teaspoon chili powder (adjust to taste)
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Scrub sweet potatoes and prick several times with a fork.
  2. Place sweet potatoes on a parchment-lined baking sheet. Roast for 45–60 minutes until fork-tender.
  3. Meanwhile, heat a skillet over medium. Add ground turkey, cook and break it up until browned and fully cooked (about 6–8 minutes).
  4. Add black beans, corn, chili powder, cumin, salt, and pepper. Stir well and cook for 5 minutes to combine flavors.
  5. Slice cooked sweet potatoes in half lengthwise. Scoop out a bit of flesh if desired, then fill with turkey mixture.
  6. Top with shredded cheese and return to oven. Bake for 10–15 minutes until cheese melts and bubbles.
  7. Remove from oven, garnish with cilantro if using, and serve warm.

Notes

You can prep the filling in advance and store separately. For a spicier kick, mix in chopped jalapeños or hot sauce. A cheese blend adds extra richness for cheese lovers.
