- 2 medium zucchini, diced (about 2 cups)
- 1 large bell pepper, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Warm olive oil in a large skillet over medium heat. Add diced onion and bell pepper, cooking for 3 to 4 minutes until they begin to soften.
- Add ground beef to the pan. Cook while breaking it apart until fully browned, about 5 to 7 minutes. Drain excess grease if necessary.
- Mix in minced garlic, Italian seasoning, salt, and pepper. Stir and cook for an additional minute until the garlic is aromatic.
- Add diced zucchini to the skillet. Continue to cook for another 5 to 7 minutes, stirring occasionally, until the zucchini is just tender but still slightly crisp.
- If using cheese, sprinkle it over the top and cover the skillet for a couple of minutes until melted. Garnish with fresh parsley before serving.
Notes
Avoid overcooking the zucchini to keep its texture. Customize with your favorite vegetables or spice it up with jalapeños or red pepper flakes. Leftovers can be stored in the fridge for up to 3 days and reheated in a skillet.
