Instructions
- In a large pot over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain any extra fat.
- Add diced onion and minced garlic to the beef, cooking for 3-4 minutes until the onion is soft and aromatic.
- Pour in beef broth, then add sliced carrots and cubed potatoes. Season with thyme, paprika, salt, and pepper. Bring to a gentle boil.
- Lower the heat, cover, and let simmer for 20 minutes or until vegetables are tender.
- While the stew simmers, prepare dumplings: mix flour, baking powder, and salt in a bowl. Make a well in the center, pour in milk and melted butter, and stir until just combined.
- Drop spoonfuls of dumpling batter onto the simmering stew. Cover and cook for 15-20 minutes until dumplings are puffed and cooked through.
- Stir in frozen peas, cooking for 2-3 minutes until heated through, then serve warm.
Notes
For deeper flavor, brown the beef with a splash of Worcestershire sauce before adding broth. Store leftovers in the fridge for up to 3 days, or freeze for up to 3 months. Reheat with a little extra broth if needed.
