Bring the taste of the ocean to your backyard with these Grilled Seafood Skewers. They’re packed with juicy shrimp, tender fish, and colorful veggies, all grilled to smoky perfection.
Ingredients

- 1 pound shrimp, peeled and deveined (or use scallops or your favorite firm fish)
- 1 pound firm white fish (such as cod or halibut), cut into cubes
- 1 bell pepper, cut into square pieces (use any color you like)
- 1 zucchini, sliced into rounds
- 1 red onion, chopped into chunks
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Wooden or metal skewers (soak wooden ones in water for 30 minutes)
Instructions
- Mix olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper in a bowl to make your marinade.
- Add the shrimp, fish, and chopped vegetables to the bowl. Toss gently to coat, cover, and refrigerate for 30 minutes.
- Preheat the grill to medium-high heat. If using charcoal, wait until the coals are glowing.
- Skewer the marinated seafood and veggies, alternating each ingredient.
- Grill the skewers for 2–3 minutes per side until shrimp are pink and fish flakes easily. Don’t overcook.
- Remove from grill and let rest a couple of minutes. Garnish with fresh herbs before serving.
Notes
Don’t overcrowd your skewers so everything grills evenly. Feel free to swap in other seafood like lobster or add heat with jalapeño slices. Great for meal prep and quick grilling later.
