Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 head romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/3 cup shaved Grana Padano or Parmesan cheese
  • 1/2 cup Caesar dressing (store-bought or homemade)
  • Croutons for topping

Instructions

  1. Preheat grill to medium-high. Drizzle chicken with olive oil and season with salt and pepper.
  2. Grill chicken for 6-7 minutes per side, until internal temperature reaches 165°F. Let rest, then slice into strips.
  3. In a large bowl, toss chopped romaine, cherry tomatoes, and shaved cheese together.
  4. Add Caesar dressing and toss again until evenly coated.
  5. Top with grilled chicken strips, sprinkle croutons, and add more cheese if desired.

Notes

For extra flavor, marinate the chicken in lemon juice, garlic, and herbs for an hour before grilling. Store-bought grilled chicken works too if you’re short on time. Add quinoa or farro for a heartier twist.
