Description

Sweet, juicy apricots kissed by the grill, caramelized to perfection and drizzled with honey for a simple yet irresistible summer treat.


Ingredients

  • 8 fresh apricots (halved and pitted; peaches can be used instead)
  • 2 tablespoons olive oil (or avocado oil)
  • 2 tablespoons honey (local honey adds extra flavor)
  • 1/4 teaspoon coarse sea salt
  • 2 tablespoons fresh mint, chopped (optional garnish)
  • Pinch of black pepper

Instructions

  1. Rinse the apricots, slice them in half, and remove the pits. Place them in a mixing bowl.
  2. In a separate small bowl, mix together the olive oil, honey, salt, and black pepper. Pour this over the apricots and toss lightly to coat.
  3. Heat the grill to medium temperature to ensure nice char marks.
  4. Place apricots cut-side down on the grill for 3–4 minutes, flip, and grill for another 2–3 minutes until tender with caramelized marks.
  5. Remove from grill, allow to cool slightly, drizzle with extra honey, and sprinkle with fresh mint before serving.

Notes

For deeper flavor, marinate apricots overnight in the honey mixture. Avoid overcooking to keep them from becoming mushy. A drizzle of balsamic reduction pairs beautifully with the sweetness.
