Description
A crisp, colorful salad made with fresh green beans, juicy cherry tomatoes, creamy feta, and a zesty lemon dressing. Perfect for summer meals or light lunches.
Ingredients

- 1 pound fresh green beans, trimmed
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1 cup crumbled feta cheese (herb-flavored optional)
- 1/4 red onion, thinly sliced
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper, to taste
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Bring a pot of salted water to a boil. Add green beans and cook for 3-4 minutes until bright green and crisp-tender. Drain and plunge into an ice bath to cool.
- While the beans cool, combine cherry tomatoes, cucumber, red onion, and feta in a large bowl.
- Drain and chop the cooled green beans into bite-sized pieces. Add them to the bowl.
- Whisk olive oil, lemon juice, salt, and pepper in a small bowl. Pour over the salad and gently toss to combine. Top with parsley if using.
- Let the salad sit for 10 minutes before serving to allow flavors to blend.
Notes
To keep everything crisp and fresh, mix the dressing in just before serving. For a twist, try adding toasted nuts, chickpeas, or switching feta for goat cheese.
