Description

A crisp, colorful salad made with fresh green beans, juicy cherry tomatoes, creamy feta, and a zesty lemon dressing. Perfect for summer meals or light lunches.


Ingredients

  • 1 pound fresh green beans, trimmed
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 cup crumbled feta cheese (herb-flavored optional)
  • 1/4 red onion, thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh parsley (optional)

Instructions

  1. Bring a pot of salted water to a boil. Add green beans and cook for 3-4 minutes until bright green and crisp-tender. Drain and plunge into an ice bath to cool.
  2. While the beans cool, combine cherry tomatoes, cucumber, red onion, and feta in a large bowl.
  3. Drain and chop the cooled green beans into bite-sized pieces. Add them to the bowl.
  4. Whisk olive oil, lemon juice, salt, and pepper in a small bowl. Pour over the salad and gently toss to combine. Top with parsley if using.
  5. Let the salad sit for 10 minutes before serving to allow flavors to blend.

Notes

To keep everything crisp and fresh, mix the dressing in just before serving. For a twist, try adding toasted nuts, chickpeas, or switching feta for goat cheese.
