A light yet hearty Greek-inspired chicken salad featuring creamy tzatziki sauce, fresh cucumbers, and seasoned chicken. Perfect for warm days and healthy lunches.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup Greek yogurt
- 1 medium cucumber, shredded or finely diced
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried)
- Salt and pepper to taste
- Mixed greens for serving
Instructions
- Season and cook the chicken if not already done. Allow it to cool, then shred into pieces.
- In a bowl, mix Greek yogurt, cucumber, garlic, lemon juice, olive oil, and dill. Season with salt and pepper to taste.
- Combine shredded chicken and chopped red onion in a large bowl. Add tzatziki sauce and mix until everything is coated.
- Serve over mixed greens, in a pita, or with your favorite side. Enjoy!
Notes
To elevate the flavor, add a bit of fresh mint to the tzatziki. Prepare ahead by storing the sauce and chicken separately. Feel free to toss in bell peppers or olives for extra flair.
