- 1 pound shrimp, peeled and deveined
- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- 1/4 cup Kalamata olives, pitted and chopped
- 1/4 cup red onion, finely chopped
- 3 cloves garlic, minced
- 2 cups vegetable or chicken broth
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, warm olive oil over medium heat and sauté garlic for about 30 seconds until fragrant.
- Add shrimp, season with salt, pepper, and oregano, and cook until pink, around 2 to 3 minutes. Remove shrimp and set aside.
- Pour in orzo and broth. Bring to a boil, then lower heat, cover, and simmer for 10 minutes or until orzo is tender.
- Stir in cherry tomatoes, olives, red onion, and the cooked shrimp. Add lemon juice and more olive oil if needed.
- Gently mix in the feta cheese and adjust seasoning. Let cook on low heat for 2 more minutes until warmed through.
- Serve warm, topped with fresh parsley if desired.
Notes
Be careful not to overcook the shrimp; they should just turn pink. Use enough broth so the orzo doesn’t become sticky. Taste and adjust seasonings throughout for the best flavor.
