  • 1 pound shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives, pitted and chopped
  • 1/4 cup red onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups vegetable or chicken broth
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, warm olive oil over medium heat and sauté garlic for about 30 seconds until fragrant.
  2. Add shrimp, season with salt, pepper, and oregano, and cook until pink, around 2 to 3 minutes. Remove shrimp and set aside.
  3. Pour in orzo and broth. Bring to a boil, then lower heat, cover, and simmer for 10 minutes or until orzo is tender.
  4. Stir in cherry tomatoes, olives, red onion, and the cooked shrimp. Add lemon juice and more olive oil if needed.
  5. Gently mix in the feta cheese and adjust seasoning. Let cook on low heat for 2 more minutes until warmed through.
  6. Serve warm, topped with fresh parsley if desired.

Notes

Be careful not to overcook the shrimp; they should just turn pink. Use enough broth so the orzo doesn’t become sticky. Taste and adjust seasonings throughout for the best flavor.
