  • 1 can (14 ounces) diced tomatoes, with juices
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, and sauté for 3-4 minutes until fragrant and translucent.
  2. Add sausage pieces and cook for 5-7 minutes until browned.
  3. Stir in diced tomatoes, beans, broth, cumin, and oregano. Bring to a gentle simmer.
  4. Let the stew simmer for 20-30 minutes, stirring occasionally. Season with salt and pepper to taste.
  5. Serve hot with fresh parsley on top. Pair with crusty bread or over rice for a complete meal.

Notes

For a lighter option, substitute turkey or chicken sausage. Letting the stew simmer longer enhances the flavor, and adding red pepper flakes gives it a spicy kick.
