Description
This Greek Sausage Bean Stew brings together bold flavors, tender beans, and savory sausage in one hearty and comforting dish. Perfect for busy weeknights or cozy dinners.
Ingredients
Scale
- 1 pound Greek sausage, cut into bite-sized pieces
- 2 cans (15 ounces each) cannellini beans, rinsed and drained
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 can (14 ounces) diced tomatoes, with juices
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 tablespoon ground cumin
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, and sauté for 3-4 minutes until fragrant and translucent.
- Add sausage pieces and cook for 5-7 minutes until browned.
- Stir in diced tomatoes, beans, broth, cumin, and oregano. Bring to a gentle simmer.
- Let the stew simmer for 20-30 minutes, stirring occasionally. Season with salt and pepper to taste.
- Serve hot with fresh parsley on top. Pair with crusty bread or over rice for a complete meal.
Notes
For a lighter option, substitute turkey or chicken sausage. Letting the stew simmer longer enhances the flavor, and adding red pepper flakes gives it a spicy kick.
