Ingredients

- 1 pound of grilled chicken or lamb, cut into bite-sized pieces (or grilled halloumi for a vegetarian option)
- 2 cups of chopped romaine lettuce
- 1 cup of cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup of red onion, thinly sliced
- 1/2 cup of Kalamata olives, pitted
- 1 cup of feta cheese, crumbled
- 1/4 cup of olive oil
- 2 tablespoons of red wine vinegar
- 1 tablespoon of dried oregano
- Salt and pepper, to taste
Instructions
- In a large bowl, combine romaine lettuce, cherry tomatoes, cucumber, red onion, and Kalamata olives. Toss gently.
- Add grilled chicken or lamb to the bowl, then sprinkle with crumbled feta cheese.
- In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper.
- Pour the dressing over the salad and toss until everything is evenly coated. Taste and adjust the seasoning if needed.
- Serve right away and enjoy. For a fuller spread, pair with warm pita and Greek Salad.
Notes
Add roasted peppers or artichoke hearts for an extra Mediterranean twist. Prep ingredients ahead and assemble just before serving. Store meat and salad separately in the fridge for up to two days.
