Description

A refreshing and flavorful Greek salad packed with juicy tomatoes, crisp cucumbers, briny olives, and creamy feta cheese, a classic Mediterranean favorite perfect for summer or anytime you crave something fresh and healthy.


Ingredients

  • 1 English cucumber, sliced into half-moons
  • 2 vine-ripened tomatoes, cut into wedges
  • ½ red onion, thinly sliced
  • ½ green bell pepper (optional), chopped
  • ½ cup Kalamata olives, sliced in half
  • ½ cup feta cheese, crumbled
  • ¼ cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • ½ tsp thyme

Instructions

  1. Slice the cucumber into half-moons and cut tomatoes into wedges.
  2. Thinly slice the red onion and chop the green bell pepper if using.
  3. Combine vegetables in a large bowl.
  4. Add sliced Kalamata olives and crumbled feta on top.
  5. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, oregano, and thyme.
  6. Pour the dressing over the salad.
  7. Gently toss everything together.
  8. Let sit for 10 minutes to allow flavors to meld before serving.

Notes
