- ¼ cup extra virgin olive oil

Instructions
- Slice the cucumber into half-moons and cut tomatoes into wedges.
- Thinly slice the red onion and chop the green bell pepper if using.
- Combine vegetables in a large bowl.
- Add sliced Kalamata olives and crumbled feta on top.
- In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, oregano, and thyme.
- Pour the dressing over the salad.
- Gently toss everything together.
