Description

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners or lightly grease it.
  2. In a large bowl, cream together the softened butter, creamy peanut butter, and sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, mixing thoroughly after each. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until blended. Do not overmix.
  6. Gently fold in chocolate chips, if using. Spoon the batter evenly into the cupcake liners, filling each about two-thirds full.
  7. Create a small well in the center of each cupcake and add a heaping teaspoon of peanut butter into the center of each.
  8. Bake for 18-20 minutes, or until a toothpick inserted at the edge comes out clean but the center is still slightly soft.
  9. Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack. Serve warm to enjoy the gooey lava center!

Notes

Try topping with chopped peanuts or a drizzle of chocolate sauce for extra indulgence. These cupcakes also reheat wonderfully in the microwave, just 10 seconds brings back that molten core!
