- 1/2 teaspoon baking soda
- 1/4 teaspoon salt

- 1 large egg
Instructions
- Preheat oven to 350°F (175°C) and prepare a muffin tin with liners or grease lightly.
- In a large bowl, whisk together all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and brown sugar.
- In a separate bowl, combine milk, oil, egg, and ginger until well mixed.
- Gently stir wet ingredients into dry ingredients until just combined. Fold in chopped apricots.
- Spoon batter into muffin cups, filling about 2/3 full.
- Bake for 18–20 minutes or until a toothpick comes out clean.
- Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
