- 12 oz spaghetti or fettuccine – swap with whole grain or gluten-free pasta if preferred
- 1 lb steak (sirloin, ribeye, or flank for a leaner option)
- 4 garlic cloves, minced – add more if you’re a garlic fan
- 1/2 cup heavy cream – or use half-and-half for a lighter version
- 1/2 cup beef broth – go for low-sodium to manage salt
- 1/2 cup grated Parmesan cheese – or try Romano
- Salt and black pepper to taste
- Fresh parsley, chopped – for garnish
Instructions
- Cook the pasta as directed on the package until al dente. Drain, reserving 1/2 cup of the pasta water.
- Season steak with salt and pepper. In a hot skillet over medium-high heat, sear both sides until browned and cooked to your preference (3–5 minutes per side for medium). Remove and let rest.
- In the same pan, sauté the garlic for about 1 minute until fragrant, not browned.
- Add the beef broth and heavy cream. Stir well and let simmer for about 5 minutes to blend flavors.
- Slice the steak thinly against the grain and return to the skillet with the cooked pasta. Mix well, adding pasta water as needed to loosen the sauce.
- Stir in Parmesan until melted and the sauce is creamy. Taste and adjust seasoning.
- Serve hot, garnished with chopped parsley.
Notes
