Instructions
- In a mixing bowl, stir together the flour, parmesan, breadcrumbs, garlic, Italian seasoning, salt, and pepper to form the dry coating.
- Dip the chicken cubes in the beaten eggs to coat, then roll them in the dry mix until fully covered.
- Heat olive oil in a skillet over medium heat. Add chicken pieces without crowding the pan.
- Fry 4–5 minutes per side until crispy and golden, ensuring internal temperature reaches 165°F (75°C).
- Drain chicken bites on paper towels and sprinkle with parsley before serving.
Notes
Avoid overcrowding the skillet to maintain crispiness. For a healthier option, bake at 400°F (200°C) for 20–25 minutes. These bites store well and reheat crisply in the oven.
