- 4 boneless, skinless chicken breasts (around 1.5 lbs) – thighs can be used for more flavor
- 4 garlic cloves, minced – roasted garlic works for a milder taste
- 1/4 cup olive oil – melted butter is a rich alternative
- 2 tablespoons chopped fresh rosemary – dried rosemary can substitute
- 2 tablespoons chopped fresh thyme – or fresh parsley if preferred
- Salt and pepper to taste
- Juice of 1 lemon – adds a bright citrusy touch
Instructions
- Preheat oven to 400°F (200°C) for even cooking and a crisp finish.
- In a bowl, whisk together olive oil, garlic, rosemary, thyme, lemon juice, salt, and pepper.
- Add the chicken breasts to the bowl, coating thoroughly. Marinate for at least 15 minutes, or up to 1 hour for deeper flavor.
- Transfer chicken to a baking dish and pour remaining marinade over the top.
- Bake for 25–30 minutes, or until the internal temperature hits 165°F (75°C).
- Let the chicken rest for 5 minutes before slicing to retain juices.
Notes
Use fresh herbs whenever possible for the best flavor. This recipe is easy to double and great for leftovers in wraps or salads. Add red pepper flakes if you want a little heat.
