  • 1 pound sirloin steak (chicken is a great alternative too)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 pound cheese tortellini (fresh or frozen)
  • 1/4 cup unsalted butter
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Generously season the steak with salt and pepper. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Cook the steak for 4-5 minutes per side until it reaches your preferred doneness. Set aside to rest, then slice into thin strips.
  2. Using the same skillet, pour in the remaining olive oil and sauté the minced garlic for about 30 seconds until it becomes fragrant—don’t let it brown.
  3. Cook the tortellini according to the package directions. Drain and add them to the skillet with garlic.
  4. Lower the heat and stir in the butter until melted. Add Parmesan cheese and stir until everything is creamy and well combined.
  5. Return the sliced steak to the skillet and toss gently with the tortellini. Taste and adjust seasoning as needed. Top with chopped parsley and serve.

Notes

To add some kick, toss in a pinch of red pepper flakes while cooking the garlic. Letting the steak rest after searing keeps it tender and juicy. Want extra creaminess? A splash of heavy cream can be stirred in with the butter and cheese.
