- 12 ounces rigatoni pasta
- 1 pound beef steak (sirloin or ribeye)
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 cup beef broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Boil rigatoni in salted water until al dente (about 11–12 minutes). Reserve 1 cup of pasta water, then drain.
- Season steak with salt and pepper. In a skillet, melt 2 tablespoons butter over medium-high heat. Sear steak 4–5 minutes per side until desired doneness. Remove and let rest.
- In the same skillet, add remaining 2 tablespoons butter and garlic. Sauté 30 seconds until fragrant. Add beef broth and scrape up any browned bits.
- Slice steak into bite-sized pieces. Add steak and drained rigatoni to the skillet. Mix well, adding reserved pasta water if needed to loosen the sauce.
- Serve hot, garnished with chopped parsley and optionally grated Parmesan.
Notes
For deeper flavor, marinate the steak with garlic and herbs ahead of time. Add mushrooms or bell peppers to bulk it up. Great for meal prep—just double the ingredients and adjust cooking time.
