Description

Juicy shrimp sautéed in rich garlic butter, tucked into vibrant bell peppers, and topped with melty cheese, this dish is a flavor explosion that’s as impressive as it is easy to make.


Ingredients

  • 6 large bell peppers (any color: red, yellow, or green)
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • ½ cup grated cheese (mozzarella or cheddar)
  • ¼ cup fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut tops off bell peppers, remove seeds, and lightly salt the inside.
  3. In a skillet over medium heat, melt butter and sauté garlic for 1-2 minutes.
  4. Add shrimp, paprika, and Italian herbs. Cook for 3-4 minutes until shrimp are pink and cooked through. Season with salt and pepper.
  5. Remove from heat and stir in half the cheese and parsley.
  6. Fill each pepper with shrimp mixture and place in a baking dish.
  7. Top with remaining cheese.
  8. Cover with foil and bake for 20 minutes. Remove foil and bake 10-15 minutes more, until cheese is golden and bubbly.

Notes

For extra flavor, try mixing in chopped spinach or kale. Don’t overcook the shrimp; they should be fully done before stuffing, since baking time is short.
