- 6 large bell peppers (any color: red, yellow, or green)
- 1 pound large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
- ½ cup grated cheese (mozzarella or cheddar)
- ¼ cup fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C).
- Cut tops off bell peppers, remove seeds, and lightly salt the inside.
- In a skillet over medium heat, melt butter and sauté garlic for 1-2 minutes.
- Add shrimp, paprika, and Italian herbs. Cook for 3-4 minutes until shrimp are pink and cooked through. Season with salt and pepper.
- Remove from heat and stir in half the cheese and parsley.
- Fill each pepper with shrimp mixture and place in a baking dish.
- Top with remaining cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake 10-15 minutes more, until cheese is golden and bubbly.
Notes
For extra flavor, try mixing in chopped spinach or kale. Don’t overcook the shrimp; they should be fully done before stuffing, since baking time is short.
