- 12 ounces rigatoni pasta
- 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
- 4 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper, to taste
- Chopped parsley, for garnish
Instructions
- Cook rigatoni according to package directions until al dente. Salt the water generously. Drain and set aside.
- In a large skillet over medium heat, melt the butter. Add the garlic and sauté for 1 minute until fragrant, but not browned.
- Add the chicken pieces, season with salt and pepper, and cook for 5–7 minutes until golden and fully cooked.
- Reduce heat and pour in the heavy cream. Stir and let simmer until slightly thickened.
- Gradually mix in Parmesan cheese until the sauce is smooth and creamy.
- Add the cooked rigatoni and toss to coat the pasta evenly with the sauce and chicken.
- Taste and adjust seasoning. Serve hot, topped with chopped parsley for a fresh finish.
Notes
Try using rotisserie chicken for a faster version. Leftover sauce goes great with any pasta and keeps up to 3 days in the fridge. Reheat gently with a splash of milk or water.
