- 1 pound (450g) chicken breast, diced
- 12 ounces (340g) pasta (penne or fettuccine recommended)
- 1/2 cup (115g) unsalted butter
- 4 cloves garlic, minced
- 1 cup (240ml) heavy cream
- 1/2 cup (50g) grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Cook the pasta in salted boiling water according to package directions. Reserve 1 cup of the pasta water, then drain.
- In a skillet over medium heat, melt the butter until bubbling. Add garlic and sauté 1-2 minutes until fragrant, without burning.
- Add diced chicken, season with salt and pepper, and cook 6-8 minutes until golden and cooked through.
- Pour in the heavy cream, stir gently, and bring to a simmer. Mix in Parmesan cheese until melted and sauce thickens.
- Add the pasta to the skillet, tossing to coat. If needed, add reserved pasta water to loosen the sauce.
- Top with chopped parsley and serve warm.
Notes
For lighter options, swap heavy cream with half-and-half or cashew cream. Try adding veggies like spinach, broccoli, or bell peppers for extra nutrition.
