Description
This Classic French Potato Salad is a refreshing, vinaigrette-based side dish that’s perfect for summer gatherings. Light, herby, and full of flavor, it’s the ideal partner for anything off the grill.
Ingredients
Scale
- 2 pounds of baby potatoes, halved (sweet potatoes can be used as a lighter option)
- 1/3 cup of olive oil
- 2 tablespoons of white wine vinegar (or apple cider vinegar)
- 1 tablespoon of Dijon mustard
- 1 teaspoon of salt
- 1/2 teaspoon of freshly ground black pepper
- 1/4 cup of chopped fresh parsley (dill or chives can be used instead)
- 1/4 cup of finely chopped red onion
- 1/2 cup of halved cherry tomatoes (optional)
Instructions
- Boil the potatoes in salted water for 15–20 minutes, until just fork-tender. Drain and allow to cool.
- Whisk together olive oil, vinegar, Dijon mustard, salt, and pepper to make a vinaigrette.
- Place cooled potatoes in a large bowl, pour the vinaigrette over them, and gently toss.
- Add parsley, red onion, and cherry tomatoes (if using) to the bowl and mix well.
- Let the salad rest for 30 minutes to allow the flavors to fully develop before serving.
Notes
Leftover roasted potatoes work great in this recipe. Make ahead and store for up to 3 days. Try adding bacon or chickpeas for a protein boost.
