  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 cup beef or vegetable broth
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • Salt and pepper, to taste
  • 8 slices sourdough or crusty bread
  • 8 ounces shredded Gruyère cheese (or Swiss cheese)
  • 4 ounces shredded sharp cheddar cheese
  • 4 tablespoons unsalted butter (for grilling)

Instructions

  1. In a large skillet over medium heat, melt 2 tablespoons butter with the olive oil. Add onions and a pinch of salt. Cook, stirring occasionally, until deeply caramelized and golden, about 25 to 30 minutes.
  2. Add the broth and thyme to the caramelized onions. Let simmer for 10 minutes to meld the flavors. Season with salt and pepper.
  3. To assemble, layer shredded Gruyère and cheddar between two slices of bread. Add a spoonful of the onion mixture for extra richness.
  4. Heat a skillet over medium and melt 1 tablespoon of butter. Grill each sandwich until both sides are golden brown and the cheese is melted, about 4 to 5 minutes per side.
  5. Repeat for all sandwiches, adding more butter as needed. Cut in half and serve hot, perfect alongside a bowl of soup!
