- 8 slices sourdough or crusty bread
- 8 ounces shredded Gruyère cheese (or Swiss cheese)
- 4 ounces shredded sharp cheddar cheese

Instructions
- In a large skillet over medium heat, melt 2 tablespoons butter with the olive oil. Add onions and a pinch of salt. Cook, stirring occasionally, until deeply caramelized and golden, about 25 to 30 minutes.
- Add the broth and thyme to the caramelized onions. Let simmer for 10 minutes to meld the flavors. Season with salt and pepper.
- To assemble, layer shredded Gruyère and cheddar between two slices of bread. Add a spoonful of the onion mixture for extra richness.
- Heat a skillet over medium and melt 1 tablespoon of butter. Grill each sandwich until both sides are golden brown and the cheese is melted, about 4 to 5 minutes per side.
- Repeat for all sandwiches, adding more butter as needed. Cut in half and serve hot, perfect alongside a bowl of soup!
