- 2 cups long-grain white rice (or brown rice if preferred)
- 1 lb ground beef or turkey
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) diced tomatoes with green chilies
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth or vegetable broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 cup frozen corn (optional)
- Fresh cilantro, chopped (for garnish)
Instructions
- In a large skillet, cook ground beef over medium heat until browned. Drain excess fat and set meat aside.
- Using the same pan, sauté onion and garlic until soft and fragrant, around 3-4 minutes.
- Mix in the rice, chili powder, cumin, and paprika, stirring to coat the grains with seasoning.
- Add chicken broth, tomatoes, and black beans. Bring to a simmer, cover, and reduce heat to low. Cook for 20-25 minutes until rice is cooked and liquid absorbed.
- If adding corn, stir it in during the last 5 minutes to warm through.
- Fluff with a fork, season with salt and pepper, and garnish with cilantro before serving.
Notes
For a smoky twist, try smoked paprika or a dash of liquid smoke. Customize with jalapeños or cayenne if you like it spicy. Great for meal prep – stores well for up to 3 days in the fridge.
