Description

A deliciously hearty rice dish brimming with bold spices, beans, and ground meat – perfect for family dinners or casual gatherings.


Ingredients

  • 2 cups long-grain white rice (or brown rice if preferred)
  • 1 lb ground beef or turkey
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth or vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 cup frozen corn (optional)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat and set meat aside.
  2. Using the same pan, sauté onion and garlic until soft and fragrant, around 3-4 minutes.
  3. Mix in the rice, chili powder, cumin, and paprika, stirring to coat the grains with seasoning.
  4. Add chicken broth, tomatoes, and black beans. Bring to a simmer, cover, and reduce heat to low. Cook for 20-25 minutes until rice is cooked and liquid absorbed.
  5. If adding corn, stir it in during the last 5 minutes to warm through.
  6. Fluff with a fork, season with salt and pepper, and garnish with cilantro before serving.

Notes

For a smoky twist, try smoked paprika or a dash of liquid smoke. Customize with jalapeños or cayenne if you like it spicy. Great for meal prep – stores well for up to 3 days in the fridge.
