Description

A delightful flaky almond pastry with buttery layers, a nutty almond filling, and a touch of sweetness, perfect for breakfast, dessert, or any special occasion.


Ingredients

  • 2 cups all-purpose flour (or almond flour for gluten-free)
  • 1/2 cup unsalted butter, cold and cubed (or vegan butter)
  • 1/4 cup ice water
  • 1 cup almond meal
  • 1/4 cup granulated sugar
  • 1 teaspoon almond extract
  • 1 egg (or flax egg)
  • Powdered sugar, for dusting

Instructions

  1. In a mixing bowl, combine flour and sugar. Add cold butter and mix until crumbly.
  2. Slowly add ice water and stir just until dough forms. Do not overmix.
  3. Shape dough into a ball, wrap in plastic, and chill for 30 minutes.
  4. Preheat oven to 375°F (190°C). Roll dough out to about 1/8 inch thick on a floured surface.
  5. Place dough on a parchment-lined baking sheet. Spread almond meal evenly and drizzle with almond extract.
  6. Fold pastry edges over and brush top with beaten egg.
  7. Bake for 20-25 minutes until golden and flaky.
  8. Cool slightly and dust with powdered sugar before serving.

Notes

Avoid overworking the dough to keep it light and flaky. Always chill the dough before rolling. Store leftovers wrapped in the fridge for up to 3 days or freeze for longer.
