- 4 cups chicken broth
- 2 cups water
- 2 boneless, skinless chicken breasts (about 1 pound)
- 2 packs of ramen noodles (discard the seasoning packets)
- 2 tablespoons soy sauce
- 2 tablespoons sriracha (adjust to taste)
- 1 tablespoon sesame oil
- 1 cup sliced shiitake mushrooms
- 2 cups spinach leaves
- 1 cup sliced green onions
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- Soft-boiled eggs (optional, for topping)
- Chili flakes (optional, for garnish)
Instructions
- In a large pot over medium heat, warm the sesame oil. Sauté garlic and ginger for about a minute until aromatic.
- Add chicken broth and water, bringing the mixture to a light simmer.
- Place the chicken breasts in the pot along with soy sauce and sriracha. Simmer for 15–20 minutes, or until chicken is fully cooked.
- Remove the chicken, shred it with forks, and return it to the broth.
- Add mushrooms, spinach, and ramen noodles. Cook 5–7 minutes until noodles are soft and spinach is wilted.
- Dish up hot and garnish with green onions, soft-boiled eggs, and a pinch of chili flakes if desired.
Notes
To make it creamier, stir in a bit of coconut milk at the end. Preparing ahead? Store noodles and broth separately to keep texture intact. Customize your toppings with fresh herbs or a dash of lime!
