Description

This soul-warming Spicy Chicken Ramen is the ultimate comfort in a bowl. Juicy chicken, bold broth, and crisp veggies come together to deliver a restaurant-quality meal right at home.


Ingredients

  • 4 cups chicken broth
  • 2 cups water
  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 2 packs of ramen noodles (discard the seasoning packets)
  • 2 tablespoons soy sauce
  • 2 tablespoons sriracha (adjust to taste)
  • 1 tablespoon sesame oil
  • 1 cup sliced shiitake mushrooms
  • 2 cups spinach leaves
  • 1 cup sliced green onions
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • Soft-boiled eggs (optional, for topping)
  • Chili flakes (optional, for garnish)

Instructions

  1. In a large pot over medium heat, warm the sesame oil. Sauté garlic and ginger for about a minute until aromatic.
  2. Add chicken broth and water, bringing the mixture to a light simmer.
  3. Place the chicken breasts in the pot along with soy sauce and sriracha. Simmer for 15–20 minutes, or until chicken is fully cooked.
  4. Remove the chicken, shred it with forks, and return it to the broth.
  5. Add mushrooms, spinach, and ramen noodles. Cook 5–7 minutes until noodles are soft and spinach is wilted.
  6. Dish up hot and garnish with green onions, soft-boiled eggs, and a pinch of chili flakes if desired.

Notes

To make it creamier, stir in a bit of coconut milk at the end. Preparing ahead? Store noodles and broth separately to keep texture intact. Customize your toppings with fresh herbs or a dash of lime!
