Description
These mini cheesecake bites are rich, creamy, and absolutely adorable. Perfect for parties or whenever you’re craving something sweet in a small package. They’re quick to prep and even easier to enjoy!
Ingredients
Scale
- 8 oz cream cheese, softened (or substitute with ricotta for a lighter twist)
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup whipped topping
- 1 cup graham cracker crumbs
- 1/4 cup melted butter
- Fresh berries or chocolate drizzle for garnish (optional)
Instructions
- In a mixing bowl, beat the softened cream cheese until it becomes smooth and creamy. Using a hand mixer helps achieve the best texture.
- Add sugar and vanilla to the cream cheese, mixing until the ingredients are fully incorporated.
- Carefully fold the whipped topping into the mixture until everything is well combined and fluffy.
- In a separate bowl, combine graham cracker crumbs and melted butter until it resembles wet sand.
- Line a mini muffin tin with paper liners and press about a tablespoon of the crumb mixture into each one to create the crust.
- Spoon the cheesecake mixture over each crust, filling each cup about 3/4 full.
- Place the tray in the fridge and chill for at least 2 hours or until the cheesecakes are fully set.
- Once set, top with fresh berries or a drizzle of chocolate if desired before serving.
Notes
Try adding crushed cookies or a bit of lemon zest to the filling for extra flavor. These bites can be frozen—just wrap well and thaw in the fridge before serving.
