Description

These mini cheesecake bites are rich, creamy, and absolutely adorable. Perfect for parties or whenever you’re craving something sweet in a small package. They’re quick to prep and even easier to enjoy!


Ingredients

  • 8 oz cream cheese, softened (or substitute with ricotta for a lighter twist)
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup whipped topping
  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • Fresh berries or chocolate drizzle for garnish (optional)

Instructions

  1. In a mixing bowl, beat the softened cream cheese until it becomes smooth and creamy. Using a hand mixer helps achieve the best texture.
  2. Add sugar and vanilla to the cream cheese, mixing until the ingredients are fully incorporated.
  3. Carefully fold the whipped topping into the mixture until everything is well combined and fluffy.
  4. In a separate bowl, combine graham cracker crumbs and melted butter until it resembles wet sand.
  5. Line a mini muffin tin with paper liners and press about a tablespoon of the crumb mixture into each one to create the crust.
  6. Spoon the cheesecake mixture over each crust, filling each cup about 3/4 full.
  7. Place the tray in the fridge and chill for at least 2 hours or until the cheesecakes are fully set.
  8. Once set, top with fresh berries or a drizzle of chocolate if desired before serving.

Notes

Try adding crushed cookies or a bit of lemon zest to the filling for extra flavor. These bites can be frozen—just wrap well and thaw in the fridge before serving.
