  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 12 chipotle peppers in adobo sauce (chopped, adjust to taste)
  • 1 cup chicken broth
  • 2 cups cooked rice (brown or white)
  • 1 cup black beans (drained and rinsed)
  • 1 cup corn (fresh or frozen)
  • 1 cup cherry tomatoes (halved)
  • 1 avocado (sliced)
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high. Season chicken thighs with salt, pepper, smoked paprika, cumin, garlic powder, and onion powder. Sear chicken until golden, about 5-7 minutes per side.
  2. Chop the browned chicken into bite-sized pieces. Stir in chopped chipotle peppers and chicken broth. Lower heat and simmer for 10-15 minutes, until the chicken is cooked through and flavorful.
  3. As the chicken simmers, start building your bowls. Add a scoop of rice, then layer with black beans and corn. Top with the simmered chicken, cherry tomatoes, and avocado slices.
  4. Garnish with fresh cilantro and a drizzle of hot sauce if you’d like some extra heat. Serve and enjoy right away!

Notes
