Ingredients

- 3 cups cooked shredded chicken (rotisserie works great)
- 1 cup diced dill pickles
- 1/2 cup mayonnaise (or Greek yogurt)
- 1/4 cup finely chopped red onion
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh dill for garnish (optional)
Instructions
- Combine shredded chicken, diced dill pickles, and red onion in a large mixing bowl.
- In a smaller bowl, whisk together mayonnaise, Dijon mustard, garlic powder, salt, and pepper.
- Pour the dressing over the chicken mixture and stir until everything is well combined. Taste and adjust seasonings as needed.
- Cover and refrigerate for at least 30 minutes to allow the flavors to blend. Serve chilled.
Notes
For added flavor, try mixing in chopped apples or grapes. A pinch of cayenne or some diced jalapeños will spice things up. This salad stores well in the fridge for up to 3 days and is excellent for meal prep.
