Description

A tangy, crunchy, and protein-packed chicken salad that’s bursting with dill pickle flavor. Perfect for lunch, meal prep, or a light dinner!


Ingredients

  • 3 cups cooked shredded chicken (rotisserie works great)
  • 1 cup diced dill pickles
  • 1/2 cup mayonnaise (or Greek yogurt)
  • 1/4 cup finely chopped red onion
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh dill for garnish (optional)

Instructions

  1. Combine shredded chicken, diced dill pickles, and red onion in a large mixing bowl.
  2. In a smaller bowl, whisk together mayonnaise, Dijon mustard, garlic powder, salt, and pepper.
  3. Pour the dressing over the chicken mixture and stir until everything is well combined. Taste and adjust seasonings as needed.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to blend. Serve chilled.

Notes

For added flavor, try mixing in chopped apples or grapes. A pinch of cayenne or some diced jalapeños will spice things up. This salad stores well in the fridge for up to 3 days and is excellent for meal prep.
