Description

A creamy, spiced chicken salad featuring sweet raisins, crunchy cashews, and a tangy curry dressing, ideal for wraps, sandwiches, or low-carb lettuce cups.


Ingredients

  • ½ cup mayonnaise
  • 2 tablespoons fresh lime juice
  • 2 teaspoons curry powder
  • ¼ teaspoon ground black pepper
  • ½ teaspoon salt (or to taste)
  • 3 cups cooked chicken, shredded or diced
  • ½ cup finely diced celery
  • ½ cup raisins
  • ½ cup chopped roasted cashews
  • ¼ cup chopped scallions

Instructions

  1. In a large mixing bowl, whisk together mayonnaise, lime juice, curry powder, black pepper, and salt until well combined.
  2. Add in the cooked chicken, celery, raisins, and scallions. Stir until everything is evenly coated in the dressing.
  3. Cover and chill in the refrigerator for at least 30 minutes to let the flavors meld.
  4. Right before serving, mix in the roasted cashews and adjust seasoning as needed. Serve chilled.

Notes
