- 3 cups cooked chicken, shredded or diced
- ½ cup finely diced celery
- ½ cup raisins
- ½ cup chopped roasted cashews
- ¼ cup chopped scallions
Instructions
- In a large mixing bowl, whisk together mayonnaise, lime juice, curry powder, black pepper, and salt until well combined.
- Add in the cooked chicken, celery, raisins, and scallions. Stir until everything is evenly coated in the dressing.
- Cover and chill in the refrigerator for at least 30 minutes to let the flavors meld.
- Right before serving, mix in the roasted cashews and adjust seasoning as needed. Serve chilled.
