- 3 large cucumbers, diced (about 6 cups)
- 2 sweet bell peppers (any color), chopped
- 1 red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, finely chopped
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Instructions
- Place cucumbers, sweet peppers, red onion, and cherry tomatoes in a large bowl. Gently toss to combine.
- In a separate small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
- Pour the dressing over the vegetables and toss again until everything is evenly coated.
- Top with chopped parsley and toss one final time. Let sit for 10 minutes before serving to let the flavors develop.
Notes
Add radishes or snap peas for more crunch. Basil or mint make great herb swaps. To keep it fresh, store the dressing separately until ready to serve.
