Ingredients

  • 4 medium cucumbers – sliced
  • 1 cup cherry tomatoes – halved
  • 1 small red onion – thinly sliced
  • 1/4 cup fresh parsley – chopped
  • 1/4 cup feta cheese – crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper – to taste

Instructions

  1. Wash the cucumbers and slice into thin rounds. Keep the peel on for extra texture, or peel them if preferred.
  2. In a large bowl, combine cucumber slices, halved cherry tomatoes, and sliced red onion. Toss lightly.
  3. In a separate bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
  4. Pour the dressing over the vegetables and toss gently to coat evenly. Sprinkle with chopped parsley and crumbled feta.
  5. Let the salad sit for at least 10 minutes before serving to allow the flavors to meld.

Notes

For a dairy-free version, skip the feta. Add jalapeños or hot sauce for heat, or toss in chickpeas for a protein boost. Store leftovers in an airtight container for up to 2 days. For best texture, store the dressing separately and add just before serving.
