Instructions
- Wash the cucumbers and slice into thin rounds. Keep the peel on for extra texture, or peel them if preferred.
- In a large bowl, combine cucumber slices, halved cherry tomatoes, and sliced red onion. Toss lightly.
- In a separate bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
