- 3 large cucumbers, peeled and diced (English cucumbers work well too)
- 1 cup crumbled feta cheese
- 1 red onion, thinly sliced
- 1 bell pepper (any color), diced
- 1/4 cup chopped fresh dill (or 2 tablespoons dried dill)
- 1/4 cup olive oil
- 2 tablespoons white wine vinegar
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine cucumbers, feta cheese, red onion, bell pepper, and dill. Stir gently to mix.
- In a smaller bowl, whisk together the olive oil, white wine vinegar, salt, and pepper to create the dressing.
- Pour the dressing over the salad and toss gently until well combined. Try to keep the feta chunks intact.
- Let the salad rest for 10 minutes before serving to allow the flavors to meld.
Notes
Mandoline slicers are great for even cucumber slices. For more crunch, add toasted nuts. A few olives can also enhance the flavor. Don’t overdress—let the ingredients shine!
