Ingredients

  • 3 large cucumbers, peeled and diced (English cucumbers work well too)
  • 1 cup crumbled feta cheese
  • 1 red onion, thinly sliced
  • 1 bell pepper (any color), diced
  • 1/4 cup chopped fresh dill (or 2 tablespoons dried dill)
  • 1/4 cup olive oil
  • 2 tablespoons white wine vinegar
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine cucumbers, feta cheese, red onion, bell pepper, and dill. Stir gently to mix.
  2. In a smaller bowl, whisk together the olive oil, white wine vinegar, salt, and pepper to create the dressing.
  3. Pour the dressing over the salad and toss gently until well combined. Try to keep the feta chunks intact.
  4. Let the salad rest for 10 minutes before serving to allow the flavors to meld.

Notes

Mandoline slicers are great for even cucumber slices. For more crunch, add toasted nuts. A few olives can also enhance the flavor. Don’t overdress—let the ingredients shine!
