  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice

Instructions

  1. Wash, peel, and grate or slice the carrots as desired for texture.
  2. Dice the apple into small cubes, keeping the skin on for added crunch.
  3. In a large bowl, combine carrots, apple, and raisins or cranberries. Toss well.
  4. In a separate bowl, whisk together the Greek yogurt, honey, and lemon juice to make the dressing.
