  • 2 pounds boneless, skinless chicken thighs (or use chicken breasts if preferred)
  • 1 can (20 oz) pineapple chunks in juice (fresh pineapple also works)
  • 1 cup diced bell pepper (any color you like)
  • 1 medium onion, diced (shallots can be used for a milder flavor)
  • 1/4 cup soy sauce (low-sodium recommended)
  • 2 tablespoons brown sugar (or substitute with coconut sugar)
  • 1 tablespoon minced garlic (or 3 fresh garlic cloves)
  • 1 teaspoon ground ginger (fresh ginger adds extra flavor)
  • Salt and pepper, to taste
  • Cooked rice for serving (quinoa or cauliflower rice are great alternatives)

Instructions

  1. Layer chicken thighs at the bottom of your crockpot for even cooking and maximum flavor absorption.
  2. In a bowl, mix together pineapple chunks and juice, diced bell pepper, diced onion, soy sauce, brown sugar, garlic, and ginger until well combined.
  3. Pour the mixture over the chicken, season with salt and pepper, and stir gently to coat everything.
  4. Cook on low for 6-8 hours or on high for 3-4 hours until chicken is tender and infused with flavor.
