Description
This Crockpot Pineapple Chicken is the ultimate blend of savory and sweet – a comforting, fuss-free meal perfect for busy nights or cozy dinners. With tender chicken slow-cooked in a tropical pineapple sauce, it’s like a hug in every bite.
Ingredients
Scale
- 2 pounds boneless, skinless chicken thighs (or use chicken breasts if preferred)
- 1 can (20 oz) pineapple chunks in juice (fresh pineapple also works)
- 1 cup diced bell pepper (any color you like)
- 1 medium onion, diced (shallots can be used for a milder flavor)
- 1/4 cup soy sauce (low-sodium recommended)
- 2 tablespoons brown sugar (or substitute with coconut sugar)
- 1 tablespoon minced garlic (or 3 fresh garlic cloves)
- 1 teaspoon ground ginger (fresh ginger adds extra flavor)
- Salt and pepper, to taste
- Cooked rice for serving (quinoa or cauliflower rice are great alternatives)
Instructions
- Layer chicken thighs at the bottom of your crockpot for even cooking and maximum flavor absorption.
- In a bowl, mix together pineapple chunks and juice, diced bell pepper, diced onion, soy sauce, brown sugar, garlic, and ginger until well combined.
- Pour the mixture over the chicken, season with salt and pepper, and stir gently to coat everything.
- Cook on low for 6-8 hours or on high for 3-4 hours until chicken is tender and infused with flavor.
- Shred the chicken directly in the crockpot or transfer to a board to shred. Serve over warm rice and garnish with fresh cilantro or green onions if desired.
Notes
Add diced jalapeños for a spicy kick. For a quick stovetop version, sauté the ingredients in a pot. Leftovers are delicious in stir-fries or as a salad topping the next day.
