Description
Tender chicken slow-cooked in a rich, creamy garlic parmesan sauce with sun-dried tomatoes and herbs, this Crockpot Marry Me Chicken is the ultimate comfort food for family dinners or romantic evenings.
Ingredients
Scale
- 4 boneless, skinless chicken breasts (around 2 pounds); thighs can be used for extra flavor
- 1 cup sun-dried tomatoes, drained and chopped
- 1 cup heavy cream (or coconut milk for dairy-free)
- 1 cup chicken broth
- 1/2 cup grated parmesan cheese
- 3 cloves garlic, minced
- 2 teaspoons Italian seasoning
- Salt and pepper, to taste
- Fresh basil, chopped (for garnish)
Instructions
- Place the chicken breasts in your crockpot to start.
- In a separate bowl, combine sun-dried tomatoes, heavy cream, chicken broth, parmesan, minced garlic, Italian seasoning, salt, and pepper. Stir until well blended.
- Pour the mixture over the chicken in the crockpot, coating it evenly.
- Cover and cook on low for 6–7 hours or high for 3–4 hours.
- Once done, shred the chicken directly in the crockpot and stir to mix everything thoroughly.
- Serve over pasta, rice, or vegetables, and top with fresh basil for extra flavor.
Notes
For a lighter version, swap the heavy cream with Greek yogurt or low-fat dairy. Add spinach or bell peppers for a nutrition boost. Don’t skip the fresh basil, it makes a big difference!
