- 2 pounds boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 cups marinara sauce
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh basil, for garnish (optional)
Instructions
- Place chicken breasts at the bottom of the slow cooker.
- Pour in chicken broth and marinara until the chicken is covered.
- Add onion, garlic, Italian seasoning, salt, and pepper. Stir to mix.
- Cover and cook on low for 6 to 8 hours or high for 4 to 5 hours.
- Once done, shred chicken with two forks and return it to the crock pot.
- Stir in mozzarella and Parmesan, let melt uncovered for 15 minutes.
- Serve hot, topped with fresh basil if desired.
Notes
For deeper flavor, add a splash of red wine to the broth. You can double this recipe for meal prep or freezing—just hold the cheese until ready to serve.
