Crispy Golden Brown Egg Rolls are the ultimate appetizer – crunchy on the outside, savory and juicy on the inside. These homemade egg rolls are just the thing to impress your guests or satisfy your snack cravings.

- 1 pound ground pork (or substitute with ground chicken)
- 1 cup shredded cabbage
- 1/2 cup grated carrots
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon ground ginger
- 1 package egg roll wrappers (about 20 wrappers)
- Vegetable oil for frying
Instructions
- In a skillet over medium heat, cook the ground pork until browned and no longer pink. Break it apart with a wooden spoon and drain any excess fat.
- Add garlic, cabbage, carrots, green onions, soy sauce, and ginger to the skillet. Stir and cook for 3 to 5 minutes until veggies are slightly softened.
- Remove from heat and let the filling cool for easier handling during wrapping.
- Place an egg roll wrapper on a clean surface in a diamond orientation. Add about 2 tablespoons of filling in the center.
- Fold the bottom point over the filling, then fold in both sides and roll it tightly. Use a dab of water to seal the top corner.
- Heat vegetable oil in a deep skillet over medium-high heat. Fry the egg rolls in batches, turning them until both sides are golden and crispy (about 3–4 minutes per side). Drain on paper towels.
Notes
Make-ahead tip: Assemble egg rolls and freeze before frying. Fry directly from frozen when needed. You can also switch up the fillings – try shrimp, beef, or even dessert-style egg rolls. For extra crispiness, try frying first at a lower temperature, then finish at a higher one.
