- 2 large cucumbers – peeled and washed (makes 6–8 servings)
- 1 cup crumbled feta cheese – optional: mix with softened cream cheese for added creaminess
- 1/2 cup Greek yogurt – or substitute sour cream
- 1 tbsp olive oil – flavored varieties add a nice twist
- 1 tbsp fresh dill – or swap in your favorite herbs
- 1 clove garlic – minced; lightly cooked in oil if desired
- Salt and pepper to taste
Instructions
- Use a mandoline to slice cucumbers lengthwise into thin ribbons for easy rolling.
- In a mixing bowl, combine feta, Greek yogurt, olive oil, dill, garlic, salt, and pepper until creamy and smooth.
- Lay out cucumber slices flat. Add a spoonful of the feta filling to one end of each slice.
- Roll the cucumber up to enclose the filling. Secure with a toothpick if needed.
- Place on a platter, drizzle with a little more olive oil, and top with extra dill if you like.
Notes
For added flair, try a vegetable peeler instead of a mandoline for delicate ribbons. Pre-crumbled feta is totally fine. Experiment with mint or parsley for a different flavor twist.
