Description

Cool, crunchy cucumber wraps filled with creamy, herbed feta make a standout appetizer or light snack. These refreshing bites are easy to prepare, packed with flavor, and perfect for impressing guests or enjoying solo on a warm day.


Ingredients

  • 2 large cucumbers – peeled and washed (makes 68 servings)
  • 1 cup crumbled feta cheese – optional: mix with softened cream cheese for added creaminess
  • 1/2 cup Greek yogurt – or substitute sour cream
  • 1 tbsp olive oil – flavored varieties add a nice twist
  • 1 tbsp fresh dill – or swap in your favorite herbs
  • 1 clove garlic – minced; lightly cooked in oil if desired
  • Salt and pepper to taste

Instructions

  1. Use a mandoline to slice cucumbers lengthwise into thin ribbons for easy rolling.
  2. In a mixing bowl, combine feta, Greek yogurt, olive oil, dill, garlic, salt, and pepper until creamy and smooth.
  3. Lay out cucumber slices flat. Add a spoonful of the feta filling to one end of each slice.
  4. Roll the cucumber up to enclose the filling. Secure with a toothpick if needed.
  5. Place on a platter, drizzle with a little more olive oil, and top with extra dill if you like.

Notes

For added flair, try a vegetable peeler instead of a mandoline for delicate ribbons. Pre-crumbled feta is totally fine. Experiment with mint or parsley for a different flavor twist.
