- 1 loaf Brioche bread (or Challah)
- 4 large eggs
- 1 cup heavy cream
- 1/2 cup milk
- 1/2 cup granulated sugar
- 1 tablespoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup granulated sugar (for caramelizing)
Instructions
- Slice the Brioche into thick 1-inch pieces that can hold custard without falling apart.
- In a large bowl, whisk together eggs, heavy cream, milk, sugar, vanilla, cinnamon, and salt until smooth.
- Soak each bread slice in the custard mixture for a few minutes per side until thoroughly saturated.
- Preheat oven to 375°F (190°C). Arrange soaked slices in a greased baking dish and pour any remaining custard over them.
- Bake for 25–30 minutes until edges are golden and center is just set.
- Sprinkle a thick layer of sugar on top and caramelize using a kitchen torch. Alternatively, broil for a few minutes until bubbly and golden.
- Allow to cool briefly before serving so the sugar crust firms up.
Notes
Soaking the bread well is key to a custardy texture. Prep everything the night before for an effortless brunch. You can add fresh fruit, nuts, or chocolate chips for extra flair.
