Description

Ingredients

  • 1 pound rigatoni pasta
  • 1 pound ground beef (or ground turkey)
  • 1 (16 oz) block Velveeta cheese, cubed
  • 2 cups fresh spinach (or kale)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook rigatoni according to the package until al dente. Drain and set aside.
  2. In the same pot, heat olive oil over medium heat. Add ground beef and season with salt, pepper, garlic powder, and onion powder. Cook until browned.
  3. Add diced tomatoes and spinach to the pot. Cook for 2-3 minutes until spinach wilts.
  4. Reduce heat and stir in Velveeta cubes. Mix until fully melted and combined.
  5. Fold in the cooked rigatoni and stir until evenly coated. Let cook for 1 more minute before serving.

Notes

For extra flavor, toss in red pepper flakes with the meat. Great for meal prep and keeps well in the fridge for up to 3 days. Try pairing with garlic bread or a light salad.
