Description

- 1 pound rigatoni pasta
- 1 pound ground beef (or ground turkey)
- 1 (16 oz) block Velveeta cheese, cubed
- 2 cups fresh spinach (or kale)
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
Instructions
- Bring a large pot of salted water to a boil and cook rigatoni according to the package until al dente. Drain and set aside.
- In the same pot, heat olive oil over medium heat. Add ground beef and season with salt, pepper, garlic powder, and onion powder. Cook until browned.
- Add diced tomatoes and spinach to the pot. Cook for 2-3 minutes until spinach wilts.
- Reduce heat and stir in Velveeta cubes. Mix until fully melted and combined.
- Fold in the cooked rigatoni and stir until evenly coated. Let cook for 1 more minute before serving.
Notes
For extra flavor, toss in red pepper flakes with the meat. Great for meal prep and keeps well in the fridge for up to 3 days. Try pairing with garlic bread or a light salad.
