This ultra-comforting Creamy Spinach Artichoke Chicken Delight blends golden chicken breasts with a velvety spinach-artichoke sauce for a dinner that tastes gourmet but comes together easily on any weeknight.

- 4 boneless, skinless chicken breasts (about 1.5 pounds)
- 2 cups fresh spinach, chopped
- 1 cup canned artichoke hearts, drained and chopped
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then sear for 6–7 minutes per side until fully cooked. Remove and set aside.
- In the same skillet, sauté minced garlic for about 30 seconds. Add spinach and artichokes, cooking until spinach is wilted, about 3–4 minutes.
- Stir in the heavy cream and bring to a gentle simmer. Mix in shredded mozzarella until smooth and creamy.
- Return chicken to the skillet, spooning sauce over each piece. Optionally, add red pepper flakes or Italian herbs.
- Transfer mixture to a baking dish and bake for 15–20 minutes until bubbly and well combined.
Notes
For a lighter version, try half-and-half or coconut milk instead of cream. Don’t skip browning the chicken — it adds so much flavor.
