Description

This ultra-comforting Creamy Spinach Artichoke Chicken Delight blends golden chicken breasts with a velvety spinach-artichoke sauce for a dinner that tastes gourmet but comes together easily on any weeknight.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 2 cups fresh spinach, chopped
  • 1 cup canned artichoke hearts, drained and chopped
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then sear for 6–7 minutes per side until fully cooked. Remove and set aside.
  3. In the same skillet, sauté minced garlic for about 30 seconds. Add spinach and artichokes, cooking until spinach is wilted, about 3–4 minutes.
  4. Stir in the heavy cream and bring to a gentle simmer. Mix in shredded mozzarella until smooth and creamy.
  5. Return chicken to the skillet, spooning sauce over each piece. Optionally, add red pepper flakes or Italian herbs.
  6. Transfer mixture to a baking dish and bake for 15–20 minutes until bubbly and well combined.

Notes

For a lighter version, try half-and-half or coconut milk instead of cream. Don’t skip browning the chicken — it adds so much flavor.
