Instructions
- Bring a large pot of salted water to a boil. Add rotini and cook until al dente according to package instructions. Reserve 1 cup of pasta water, then drain.
- In a large skillet over medium heat, melt the butter. Add garlic and sauté for about 1 minute until aromatic, making sure it doesn’t brown.
- Pour in the heavy cream and simmer gently for 3 to 4 minutes, stirring often, until the sauce starts to thicken.
- Mix in the grated Parmesan until melted and smooth. If needed, add a bit of reserved pasta water to reach desired sauce consistency.
- Season with salt and black pepper to taste. Toss in the cooked rotini and stir to coat thoroughly with the creamy sauce.
- Serve hot, topped with extra Parmesan and a sprinkle of fresh parsley.
Notes
