  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 cups heavy cream

Instructions

  1. Bring a large pot of salted water to a boil. Add rotini and cook until al dente according to package instructions. Reserve 1 cup of pasta water, then drain.
  2. In a large skillet over medium heat, melt the butter. Add garlic and sauté for about 1 minute until aromatic, making sure it doesn’t brown.
  3. Pour in the heavy cream and simmer gently for 3 to 4 minutes, stirring often, until the sauce starts to thicken.
  4. Mix in the grated Parmesan until melted and smooth. If needed, add a bit of reserved pasta water to reach desired sauce consistency.

Notes
