Instructions

  1. Bring a large pot of salted water to a boil. Cook the tortellini according to package directions (typically 3-5 minutes for fresh). Drain and set aside.
  2. In a large skillet over medium heat, melt the olive oil and butter. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it burn.
  3. Pour in the heavy cream and bring to a gentle simmer, stirring frequently as it thickens.
  4. Slowly mix in the grated parmesan cheese, stirring until it melts completely into a smooth sauce. Add Italian seasoning, salt, and pepper to taste.
  5. Add the cooked tortellini to the skillet. Stir in the spinach if using, and cook until wilted and everything is well combined.
  6. Garnish with fresh parsley before serving.

Notes
