- 4 boneless, skinless chicken breasts (around 1.5 pounds)
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh chopped parsley (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Season the chicken with salt and pepper, then cook for 6–7 minutes per side until golden and fully cooked through. Remove from the skillet and set aside.
- In the same skillet, sauté minced garlic for 30 seconds until aromatic—avoid burning it.
- Stir in the orzo and pour in 2 cups of water. Bring to a boil, then reduce to a simmer. Let cook for about 10 minutes, or until orzo is tender.
- Stir in the heavy cream, Parmesan cheese, and Italian seasoning. Mix until the sauce is creamy and smooth.
- Return the chicken to the skillet, spooning the sauce over it. Let it warm through for another 2–3 minutes.
- Plate and garnish with fresh parsley. Serve hot and enjoy!
Notes
Orzo can be swapped with rice or another small pasta. This recipe is great for meal prep and reheats well. For extra greens, toss in some steamed spinach or broccoli.
