- 1 lb chicken sausage, sliced
- 2 cups orzo pasta
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup fresh spinach (or kale), chopped
- 1 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Add sliced chicken sausage and cook until golden brown, about 6 to 8 minutes.
- Add the minced garlic and sauté for 1 minute until aromatic.
- Stir in the orzo, then pour in the chicken broth. Bring to a boil, then lower the heat and let it simmer covered for 10 to 12 minutes, until orzo is tender and most liquid is absorbed.
- Mix in the heavy cream and stir to create a creamy base.
- Fold in chopped spinach and Parmesan cheese, letting the spinach wilt. Season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley.
Notes
To spice it up, toss in a pinch of crushed red pepper with the sausage. For a vegetarian twist, try using chickpeas or your favorite meat alternative. This dish is also great for meal prep and reheats well.
