Description

Ingredients

  • 1 lb chicken sausage, sliced
  • 2 cups orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup fresh spinach (or kale), chopped
  • 1 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add sliced chicken sausage and cook until golden brown, about 6 to 8 minutes.
  2. Add the minced garlic and sauté for 1 minute until aromatic.
  3. Stir in the orzo, then pour in the chicken broth. Bring to a boil, then lower the heat and let it simmer covered for 10 to 12 minutes, until orzo is tender and most liquid is absorbed.
  4. Mix in the heavy cream and stir to create a creamy base.
  5. Fold in chopped spinach and Parmesan cheese, letting the spinach wilt. Season with salt and pepper to taste.
  6. Serve warm, garnished with fresh parsley.

Notes

To spice it up, toss in a pinch of crushed red pepper with the sausage. For a vegetarian twist, try using chickpeas or your favorite meat alternative. This dish is also great for meal prep and reheats well.
