A comforting bowl of creamy chicken mushroom pasta that’s rich, savory, and easy to whip up, the perfect weeknight indulgence.

- 8 ounces fettuccine pasta (or penne/rigatoni)
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, sliced
- 1 cup mushrooms, sliced (cremini or button recommended)
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Instructions
- Cook the fettuccine according to package directions. Drain and set aside, saving 1/2 cup of the pasta water.
- Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper and cook for 5–7 minutes until browned and fully cooked. Remove and set aside.
- In the same skillet, sauté garlic and mushrooms for 4–5 minutes until mushrooms are tender and golden.
- Add heavy cream, stir with the mushrooms, and let simmer for 2–3 minutes. Stir in the Parmesan cheese until melted.
- Return chicken and pasta to the skillet. Toss well, adding reserved pasta water to loosen the sauce if necessary. Taste and adjust seasoning.
- Serve warm with a sprinkle of fresh parsley on top.
Notes
For added flavor, try using different mushrooms like portobello or shiitake. You can also substitute the heavy cream with half-and-half for a lighter version. Great for leftovers!
