- 1 pound rotini pasta (or your favorite pasta shape)
- 1 pound ground beef (ground turkey is a great alternative)
- 2 tablespoons Cajun seasoning (store-bought or homemade)
- 1 cup heavy cream (or use half-and-half for a lighter version)
- 1 cup chicken broth (or vegetable broth if preferred)
- 1 diced bell pepper (mix colors for added vibrancy)
- 1 large diced onion
- 3 cloves garlic, minced
- ½ cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Boil the rotini pasta according to package directions. Drain and toss with a little olive oil to prevent sticking.
- Heat olive oil in a large skillet over medium heat. Sauté the diced onion and bell pepper until softened, around 3–4 minutes.
- Add in the minced garlic and ground beef. Cook until browned, breaking it up with a spatula. Stir in Cajun seasoning to coat the meat evenly.
- Pour in chicken broth and heavy cream, stirring to combine. Simmer for about 5 minutes until slightly thickened.
- Stir in the cooked pasta and mix to coat everything in the creamy sauce. Add Parmesan cheese and stir until melted and creamy.
- Season with salt and pepper to taste. Serve warm with chopped parsley if you like.
Notes
For extra spice, toss in some crushed red pepper when cooking the vegetables. You can also stir in spinach or mushrooms for added nutrition. This dish stores well and can be reheated gently over the stove.
